Making the Salad the “Main-Dish” for Health
You don’t starve when you switch to a ‘mostly’ plant-based diet, you just make a huge “salad” as the main meal, and any meat that you have is the little side-dish.
Today’s lunch – salad mix, baby spinach leaves, baby kale leaves, 2 asparagus stalks, 1 spring onion, flat-leaf parsley, coriander, 1 walnut (crumbled on top), sprinkle of sunflower seeds & flaked almonds, 1 cherry tomato. (all raw / uncooked)
Dressing is 1 capful of Apple Cider Vinegar + 1 capful of Balsamic Vinegar – plus it has 1/4 of an avocado squished into the salad (which gives it a creamy texture and tastes delicious), and I can make 1 avocado last 4 meals.
Everything on this plate is there for a reason – something I’m adding to my specific & individualized “cell restoration” plan; everything is there to heal my body.
There is no oil (oil = liquid fat), the “shine” that you see on the dish is because everything was rinsed in water.
This is just part of the transformation to “Eat to Live” and attempting to make a more concerted effort to make everything that goes into the system be beneficial to cellular regeneration.
The meat is a garlic meatball, but I usually prefer having a Veggie Burger in it’s place (ran out and soaking some chickpeas to make it tomorrow instead). I fry in a non-stick pan & I do add butter (for teeth re-mineralisation)
As a side-note about the meat: I would love to go meat-free, but I’m still doing extensive research to figure out if that’s actually a good idea or not, I like the idea because I think it makes karmic-sense and it does seem cruel, but I’m not quite convinced that our cells don’t benefit from a small amount each week (I’m trying to be very thorough in my research so that I don’t pass on bad information, but with so many opinions and not a lot of facts being spread around, it’s very hard to get to the guts of the truth; especially specifically for cell-level healing – and so far, there seems to be a good case for both sides). In any case, moderation seems the most logical instinct when it comes to meat. Making the salad & veggies the ‘main meal’ in every dish is very easy (and flavoursome!).
