Easy Beef Salad

Ingredients

  • 100Gms Beef Strips
  • 1/2 Tsp Chinese 5 Spice
  • 1/4 Tsp Tumeric
  • 1 Tsp Coconut Oil (for frying)
  • 1 handful Mixed Lettuce leaves
  • Sml handful Rocket
  • Few sprigs of Coriander & Flat Parsley Leaves
  • 2 Asparagus
  • 2 Brussels Sprouts
  • 4-5 Green Beans
  • 1 Slice Pumpkin, cubed
  • Optional : sprinkle of almond flakes & walnut bits
  • 1 Tsp Garlic/Ginger

 

Method

Step 1

Steam the beans, sprouts, asparagus, and pumpkin in a steaming basket on the stove.

Step 2

Heat the coconut oil, tumeric, ginger/garlic and chinese 5 spice in a frypan and cook the beef strips for 5 minutes or so (until browned), stirring/turning every minute.

Step 3

Add the salad leaves, rocket, fresh coriander and fresh parsley to your serving plate. Add some almond flakes, flaxseed and walnut bits if you desire (makes no difference to flavour, just adds some extra healthy bits to your meal).

Step 4

Take the beef off the heat and add to your salad.

Step 5

Strain the steamed vegetables and add to your salad.

Step 6

Eat immediately, yum. Had this tonight. A bit of lemon juice might of gone nicely on the greens.
